Yoghurt and Raspberry Flip When the sun is shining - which unfortunately it doesn't do that often in
Holland, even in the summer - the last thing you want to do is spend hours inside preparing food. This light yoghurt and raspberry flip is the perfect solution. Made from fresh raspberries, which are at their best in the summer months, yoghurt and vanilla custard,
it only takes about 20 minutes to make. It can also be made in advance and kept in the fridge until needed.
This recipe contains orange liqueur but you can simply replace this with
orange juice to make the dessert suitable for children or for a healthy breakfast. Eet smakelijk!

Asparagus Quiche Asparagus is in season until the end of June (the Dutch do not traditionally
eat it after St. John's on June 24). In the few weeks that it is still at its best, however, it can be cooked in a variety
of ways. One popular example is asparagus with ham, eggs and butter sauce, an easy dish which is more or less a meal in itself.
It is also a good quiche ingredient. Made using ham and leeks and with a 'wheel' of asparagus on the top,
this substantial quiche can be eaten hot for dinner or cold for lunch the next day. Simply leave out the ham to make the quiche suitable for vegetarians. Serve with a green salad for a light summery meal. Eet smakelijk!
